What's Involved
We are recruiting male volunteers for a nutrition research study into dietary biomarkers, called Food Biomarkers Alliance (FoodBall). The study involves 3 alternate week visits to UCD Institute of Food & Health where you will be asked to consume carrots with your dinner at home for 4 days, followed by collection of fasting blood & urine samples on the fifth day (Friday). At each visit, we will also take a history of your food consumption within 24 hours (24h dietary recall). These visits require the participant to fast overnight.
What's required for this position
Volunteers should be 18-40 years old & have BMI > 18.5 or <30 kg/m2. Also:
• no chronic or infectious disease
• not on any regular medication
• not on any antibiotics in the last 6 months
• not on any supplements
• non-smoker

Benefits you will receive as a volunteer
The study will determine if molecules reflective of carrots and legumes intake are present in urine and blood after their consumption and if they can tell us the quantities that people have eaten. This will help us assess people dietary intake.
